Bunch fresh spinach.
2-3 c. Red Mill all-purpose GF flour
6 t. Xanthin gum powder
2 T. Oil
3 eggs
Pinch of salt

In food processor purée spinach, add 2 c. flour and xanthin gum, cut in until spinach and flour are evenly mixed.
Change blade to dough blade or mixer with dough hook. Add the rest of the ingredients and knead until a firm, slightly tacky ball forms (add flour as needed to firm dough).

Separate into small pieces and roll out into thin sections.
Cut into noodles with pizza cutter or noodle press.

Tips: I use my food processor to mix the dough with a dough blade. I also have a pasta roller attachment for spaghetti and fettuccine noodles. I let them dry slightly before cooking. It takes about 4 minutes to cook them.Sharronhttp://www.blogger.com/profile/06845680748329014846noreply@blogger.com0tag:blogger.com,1999:blog-4530550311327897657.post-3388436286915356522015-09-10T11:28:00.005-06:002015-09-10T11:28:55.898-06:00Pulled BBQ PorkThe great thing about pulled pork? You can serve it so many different ways! We'll probably do tacos tonight, but I'm dying to try it on baked potatoes!

1 (3 to 5 pound) pork shoulder (also called pork butt or pork roast)

1 large onion, chopped into big chunks

2 cans of soda, not diet (I have used both Coca-Cola and Dr. Pepper)

1 (12 to 18 oz) bottle of your favorite BBQ Sauce (Andrea and I use Sweet Baby Ray's)

Taco Shells

Cheddar Cheese, grated to garnish

Chopped green onions to garnish, optional

In your slow cooker, place your pork and onion pieces inside. Pour your soda on top of everything and cover and cook on high at least 8 to 10 hours.

Remove the lid after 8 to 10 hours and the meat should be falling a part at the touch of your fork. Remove all of the meat from the slow cooker into a bowl and then drain your slow cooker of the onions and liquid. Add your meat back to the slow cooker and shred it up with two forks. Stir in as much of your BBQ sauce as you like. You can serve immediately or keep warm another hour or two in the slow cooker.

When you're ready to eat, fill your taco shells with pork and add a sprinkle of green onions and some shredded cheddar on top.

Whether you're making this for night one or using this as a leftover meal, you will love these pork tacos!

1 bottle of bbq sauce (I like Archer Farms - the Target brand - Hawaiian BBQ)
1 can of pineapple chunks (drained or undrained, I can't tell a difference)
1 green pepper (optional)

Place chicken in the crockpot. Pour the entire bottle of bbq sauce over the chicken. Pour the pineapple over that. Cook on low for 7-8 hours. Toward the end shred the chicken and add chopped green pepper if desired. Serve over rice. Side note: For leftovers, it tastes really good as nachos! Or as a sandwhich!Jenniferhttp://www.blogger.com/profile/01341497132954837539noreply@blogger.com0tag:blogger.com,1999:blog-4530550311327897657.post-6266655180922928772012-10-11T17:44:00.001-06:002012-10-11T17:44:57.258-06:00Photo Card<div class="sflyProductPreviewWidget" style="width:425px;
Ingredients
1 teaspoon butter or olive oil
1 cup steel-cut oats
3 cups water
3-fingered pinch salt
1 cup milk (optional)
[optional seasonings: vanilla, nutmeg, cinnamon, etc]
Tools
2-quart saucepan

Instructions
1. Start this the night before you want to have steel-cut oatmeal. Measure out your oats. This quantity will make about 4 servings.
2. Heat about 1 teaspoon butter or olive oil in a 2-quart saucepan set over medium heat. Add the oats and fry them for about 3 minutes, or until they start smelling toasty.
3. Pour in the water and add the salt. Stir. [I add a little nutmeg, cinnamon, and vanilla, too.]
4. Bring to a rolling boil.
5. Turn off the heat and cover the pan. Leave it on the stove, and go to bed!
6. The next morning, uncover the pan and bring the oatmeal back up to a simmer. If you would like thinner and creamier oatmeal, stir in a cup of milk before reheating.
When the oatmeal is warm, scoop out and enjoy!
Additional Notes:
• Cover and refrigerate any leftovers.
• Re-heat leftovers in just the same way: warm up on the stove, or in a bowl in the microwave.Unknownnoreply@blogger.com0tag:blogger.com,1999:blog-4530550311327897657.post-33637225048259391102012-01-07T11:02:00.000-07:002012-01-31T13:42:39.650-07:00Nutty Soda Cracker Candy

It's sometimes hard for me to figure out how to "cook" w/out their products, but this looked SO good!

Corn bread
1 box jiffy corn bread mix
1 4 oz can green chilies undrained
1/8 tsp garlic powder ( 1 clove of garlic)
Mix together and bake in mini baker for 20 minutes at 400

Salad layers
15 oz pinto beans
15 oz whole kernel corn
1 large tomato
1 large green or red pepper
1 medium onion
6-8 slices bacon fried crisp or 2 cups cooked chicken
2 C shredded cheese

Dressing
1 C light mayo
1 cup light sour cream
1 package dry Hidden Valley Ranch dressing mix
Mix and set aside

Layer ½ of crumbled corn bread on the bottom of the trifle bowl
Add in layers ½ each of pinto beans, corn, tomato, green or red pepper, onion, bacon or chicken, dressing and cheese
Repeat layers

Keeps well and can be made ahead.Jenniferhttp://www.blogger.com/profile/01341497132954837539noreply@blogger.com1tag:blogger.com,1999:blog-4530550311327897657.post-48359442986818624952012-01-01T16:32:00.000-07:002012-01-31T13:54:09.473-07:00Crockpot ChickenI found this recipe on Pinterest...looks good! Will try soon.

2-4 frozen boneless skinless chicken breasts
1 pkg. (8 oz.) cream cheese (let sit out to soften)
1 can cream of chicken soup
1 pkg. italian dressing seasoning (the dried kind in the packet)
rice

stir the cream cheese, cream of chicken, and seasoning together in the crockpot. i actually start it on low and let them sit in there for about 30 min so the cream cheese is softer to stir. put the frozen (because i'm lazy) chicken in and cover with the mix. cook on high 4-6 hours or until the chicken is cooked and fall-apart-tender. after the first two hours when the chicken is softer i cut it up into strips for easier eating. how easy is that!?

cook the rice in a pot and smother with chicken mixture! the italian seasoning is the secret ingredient! so yum!Jenniferhttp://www.blogger.com/profile/01341497132954837539noreply@blogger.com0tag:blogger.com,1999:blog-4530550311327897657.post-7163099664947929532011-12-25T15:49:00.000-07:002012-01-31T13:57:45.548-07:00Cinnamon Roll CakeCake:
And, I don't like lemons! Everyone seemed to like it, except my husband who banned green beans from his diet YEARS ago. :)

6 tablespoons olive oil
2 lemons 1 thinly sliced, 1 juiced
4 cloves garlic
1 teaspoon salt
1/2 teaspoon ground pepper
3/4 lb green beans
8 small red potatoes, quartered
4 chicken breasts

Preheat oven to 450. Coat a large baking dish with 1 tablespoon olive oil. Arrange lemon slices from 1 lemon in a single layer on the bottom of the dish. In large bowl combine remaining olive oil, lemon juice of 2nd lemon, garlic, salt and pepper. Add green beans and toss to coat. Using tongs, remove green beans and arrange them on top of lemon slices. Add potatoes to same olive oil mixture and coat. Arrange on inside edge of dish on top of the beans. (I think it’s so pretty!)Place chicken in olive oil mixture and coat. Place chicken in dish. Roast for 40-50 minutes. Remove chicken and continue roasting potatoes/beans if necessary.Jenniferhttp://www.blogger.com/profile/01341497132954837539noreply@blogger.com2tag:blogger.com,1999:blog-4530550311327897657.post-60724305431751798822011-12-19T15:17:00.000-07:002012-01-31T13:54:48.992-07:00Cake BallsOh this is so bad for you...but it's Christmas and how can you not bake goodies at Christmas?

Any cake mix (I like Red Velvet the best!)
any can of frosting (I like cream cheese frosting!)
Almond Bark (vanilla or chocolate, depending on your cake. I use vanilla.)

Bake the cake according to directions. While still warm, crumble the cake in a bowl and mix with the cream cheese frosting. Set in the fridge for about an hour. Then you can start forming balls. Since I hate getting my hands icky, I like to use my Pampered Chef cookie scoop thingy. What is that thing called? After making the balls, dip them in the melted almond bark using a toothpick, spoon, or the Pampered Chef egg separator (I am going to try that today.)

All done! Enjoy! :)Jenniferhttp://www.blogger.com/profile/01341497132954837539noreply@blogger.com0tag:blogger.com,1999:blog-4530550311327897657.post-42557614704275720992011-12-13T08:30:00.000-07:002012-01-31T13:50:41.064-07:00Special K Candy (aka Scotcharoos)
